A recipe for success: the Africa Born bush kitchen

Time and again, guests tell us that one of their favourite aspects of life in camp is our amazing food. It’s no mean feat cooking out in the wilderness at our mobile camps: here are the five crucial ingredients needed in our Africa Born bush kitchen.

1. Creativity

Being creative is about having fun with food. We love cooking around the fire with our guests - preparing as well as enjoying food is a key part of camp life. Be it flipping pancakes at breakfast or cooking over the coals at supper time, these foodie moments bring guests of all ages together.

2. Incredible produce

We are passionate about good food and great suppliers. Everything we serve is fresh, seasonal, organic and ethically-sourced as part of our farm-to-fork Africa Born philosophy. Kenya has some exceptional sustainable farmers and specialist producers, and we are proud to support their efforts and serve their superb food.

3. A fab team

Our bush kitchen runs on girl power. The brilliant Beatrice, for example, has been with us for 10 years, cooking alongside me on all our mobile safaris, first as an apprentice and now as Head Chef. Her flare and finesse is frankly unmissable - she is an absolute wonder in the kitchen and loves a helping hand from guests.

4. Initiative

Nothing is a given when cooking in the bush. The weather can swing from perfect sunshine to dramatic thunderstorms in a matter of minutes, so cooking outside by the fire can be eventful! Likewise, we don’t have the luxury of a top spec kitchen with guaranteed power - so warm ovens, hot water and good lighting are by no means a given. We have to think on our feet.

5. Coals

The fifth magical ingredient required for our bush kitchen. When you combine all of the above and put it over smoking hot coals you’ve a recipe for the perfect epicurean adventure. There’s something about those glowing coals - the delicious smell of supper sizzling away and the warmth from the fire as you all gather round to reflect on the day. These innocuous sooty little coals truly are the stuff of magic.
